'Sonorense' Style Chicken Tacos

1 lb. grilled chicken breast, diced

1-½ cups mild red salsa

1 cup fat free Monterey Jack cheese, shredded

2 tablespoons cilantro, finely chopped

 

1. In a large bowl mix all ingredients together until well incorporated.

2. Heat tortillas in skillet for about 1 minute or until hot. Divide filling among tortillas and fold in half. Garnish with fresh cilantro sprigs.

Yield: 4 servings

Festive Mexican Tostadas

Salsa

3 medium tomatoes, chopped

¼ cup fresh cilantro, chopped

¼ cup red onion, diced

2 tablespoons fresh lime juice

1 tablespoon mild hot sauce (or to taste)

8 corn tortillas

Toppings

1-1/2 cups fresh black beans or 1 (15 oz.) can black beans, drained and rinsed

6 romaine leaf of lettuce, finely shredded

¼ cup low fat mozzarella cheese, shredded
